The story

Souvignier Gris was bred at Freiburg in 1983 by Norbert Becker. Its registered parentage and DNA analysis disagree, so the family tree is left open here. The fruit is not in doubt: pink-grey skins that give colour and texture when the juice stays on them. Organic growers favour it, and in Poland it is used for textured whites and skin-contact wines.

Pressed straight, it is round and quietly fruity: pear, melon, a little spice. Given time on its skins it turns copper and gains grip, with dried apricot and tea.
