The story

Rebula is thought to come from Goriška Brda and the Collio; in Italy it is Ribolla Gialla. Most plantings are in Slovenia, where it is a signature grape, and its classic ground is flysch, layered and water-retentive.

Pressed straight, it is lean and quiet: lemon, white flowers, a firm line of acidity. Left on its skins for days or weeks, it turns amber and gains grip, with dried apricot, orange peel and tea. Brda's white is at home in both styles, and the skin-contact one is the more memorable.
