The story

Malvazija Istarska is the white grape of Istria, shared by Croatia, Slovenia and Italy. In Slovenia it is Istrska malvazija; it is also known as Malvasia Istriana. It is one of Croatia's signature grapes, and flysch, layered and water-retentive, is its classic ground.

It is made two ways. Fresh, it is light and floral: acacia, pear, a hint of almond and a slightly bitter finish. Macerated on its skins, it turns golden and textured, with dried fruit and herbs.
